Help! Making Midges Burnt Caramel Pudding and the sugar never turned amber. The water just boiled off and left the sugar stuck to the pan. What now?

Ok i tried AGAIN using a different pot this time - aluminum i think? Not nonstick. And it worked. They are in the oven now !

I dumped the sugar, cleaned the pan and tried again - because i missed the part about turning the heat up to high. The same thing happened again. Please help
