Can I use barbecue chips instead of normal lays

Yes to BBQ chips, but probably remove the pepper from the brine and the chicken parts of the recipe, lest the end result be too spicy.
Cook, taste, then add pepper at the table (red flakes or ground black pepper), if and as needed.
