How long should they cool before removing from pan to rack?

For a cookie like this, I take them off as soon as they seem stable enough to remove without breaking, usually 2 - 3 minutes. That's because the cookies will continue to cook for as long as the cookie sheet is hot. I like my oatmeal cookies on the soft side. Leaving them on the sheet any longer than absolutely necessary will result in a harder, crispier cookie. ;o)

I’d let them cool for about 10 minutes.
