What to do with the leftover onions?

I blend them into the sauce with an immersion blender. They add great flavor.

I save and eat them, just as they are, as a little snack, at room temperature or gently warmed. They are altogether delicious, with a bit of flavor still in them and of course, that lovely sauce clinging to them. ;o)
