Can you freeze these? They sound so delicious.

I would like to make a double batch and save some for a later date.

I’ve made these many times, and have tried freezing them. Once. They were stodgy and lifeless. Like most fried foods, these fritterra really are at their best freshly made, hot off the skillet. ;o)

I have the actual cookbook, and looked to see if Bert Greene mentioned anything about freezing them. Unfortunately, he did not. They’re essentially latkes, and you can make latkes ahead, freeze them, and reheat them in a hot oven, but they are 100x better when freshly made.

They’re quick and easy to make .. I think I would opt to freeze the potatoes and then prepare the cakes when you’re ready to eat them

While I have not made this specific recipe, I have tried to freeze similar items over the years and I gave up.

Yes, they will be edible.

No, they will not resemble what is in the photo.

The texture of the defrosted potato cakes will suffer and the scallions will lose their bright green vibrant color.

Good enough for you for a quick workday supper? Perhaps. Good enough for dinner guests? Well, that's really up to you. For sure, you should test them out by yourself before you decide to put the defrosted ones on a menu for guests.
