What are you making? Many items that call for pastry flour do just fine with AP flour with no additional ingredients, but a bit more care in the handling of the dough. A link to the recipe would help, if that's possible. ;o)

My substitutions bible and several online sources recommend a combination of all purpose and cake flour to replace pastry (2/3c a-p and 1/3c cake flour).
Not sure what to recommend if you don't have cake flour.
Maybe start with about 2/3 or 3/4c ap and then work the recipe by texture, adding more if you need.
Possibly use Constarch or potato starch to replace the cake flour (for lighter texture than ap).

PS Some of the online sources also recommend corstarch in place of cake flour if you don’t have it.

Thanks Nancy. The recipe is for cookies but it’s a very old recipe.
