Many brown parchment papers are compostable - check the packaging - if that makes a difference to you. (It certainly does to me, for environmental reasons.) I agree with drbabs that there is no difference in the performance of each, based on color. ;o)

Parchment paper helps baked goods release from the pan they are baked on or in. The color doesn’t matter.
