Prep chicken for chicken salad

Hi - I boil boneless skinless chicken breast to make chicken salad. When I take it out of the water to cool, it gets hard on the outside. How can I avoid that?

Sounds like the chicken was overcooked. Here is an easy and almost foolproof method to cooking chicken breasts: https://www.recipetineats.com/poached-chicken/

The chicken is placed in boiling water and covered, immediately the heat is shut off. Then you leave the chicken to poach for about 20-60 minutes (depending on how thick the meat is).
