Oh, geez, there it is in the narrative, I skipped right past it to the ingredients. I was also hoping to see the reviews for readers's takes and suggestions, but the link seems to be broken.

FYI Gordon Ramsay also has a Vietnamese steak recipe (very good and easy to make). Slightly different and his used sirloin.
