flours in your recipe for porcini popovers

pat, i'm thinking to make this tomorrow w/ some mushrooms i tea-smoked. plse tell me about flours for this. why oat? would almond flour be counter-productive? am also wondering about using multigrain bread flr. and ground nuts. what do you think? thx much, mindy

I wouldn't recommend almond flour in popovers; the coarser texture would probably interfere with the rise. The headnotes say "Normally I make them with all purpose flour but this time I experimented with oat flour and bread flour (for extra gluten and a better rise) and added porcini for for some umami." I'm guessing the oat flour adds a little nuttiness.
