I served it this week at the barn for the riders at camp, everyone loved it. It was just one of many salads but one of everyone's favorites!

I too think that it can go with pretty much anything -- burgers, sandwiches, steaks, chicken, or fish.

However, when I made it, I served it with a couple of other vegetable salads and foccacia. It was the perfect light dinner!

I think it would be great with sandwiches; personally, we usually have it as part of a vegetarian-type dairy meal. Hope you enjoy it!
