I just add a tad more soy sauce, a little black pepper or extra chili, and a dash of toasted sesame oil. The fish sauce has a unique flavor, but all it's really adding is salt.

Here's what I found in an Asian grocery: Vegetarian Instant Fish Sauce, Nuoc Mam Chay Pho San. Ingredients: Soya bean sauce, chilli, suagar, salt, vinegar, water, sodium benzoate. (Made in Vietnam) I've used it but I have no fish sauce memories to compare it to.
Monkeymom on food52 suggested: for 3 T fish sauce, substitute 1 Tb soy sauce, 1 Tb lime juice, 1 tsp brown sugar, 1/2 t salt, 1 tsp Worcestershire sauce.
