I have a question about the recipe "Baked Ricotta and Goat Cheese with Candied Tomatoes" from TheRunawaySpoon. Is the vermouth necessary to the dish or is there a suitable, non alcoholic substitute that will produce the same results? Any feedback would be greatly appreciated! Thanks!

I think orange juice would work well.
