A question about a recipe: Butternut-Apple Soup with Maple Cream

I have a question about the recipe "Butternut-Apple Soup with Maple Cream" from Oui, Chef. How would substituting honey crisp apples for granny smith affect the recipe?

It is not my recipe, but as the dominant ingredientin the soup is butternut, subbing honeycrisps for Granny Smiths should not result in a radical change. Honeycrisps aren't as tart as Granny Smiths, but they are very aromatic, which should work well.

I'm with wssmom here, it shouldn't be a big difference at all. The texture shouldn't change, but the soup may just be a touch sweeter due to the honeycrisps. Bet it'll be great with them, please let us know what you think with the different apples. Thanks - S
