added over 1 year agoI suspect the purée will be prettier if you do. I generally give them a good scrub, but don't peel them for roasting.
Agree with HLA; they don't need to be peeled, but well scrubbed if y9u are roasting them!
If you are certain they are organic, it is best not to peel them, as the skin of sunchokes is full of nutrients.
