added over 1 year agoI wouldn't say it ruins them, but if you peel them the day before then you have to deal with a big bowl of water full of potatoes. I'd say try to wait if you can.
I've done it often...just make sure the potatoes are covered in cold water and refrigerated. I usually change the water before boiling.
