Does it ruin potatoes if you peel them and soak in water the day before you make them?

I've done it often...just make sure the potatoes are covered in cold water and refrigerated. I usually change the water before boiling.

I wouldn't say it ruins them, but if you peel them the day before then you have to deal with a big bowl of water full of potatoes. I'd say try to wait if you can.
