Author Notes: after receiving 30 lbs of hatch green chiles from my sister-in-law one year, we had to roast and freeze them asap, but we did use some fresh ones to make rellanos and some chile cheese pancakes that were based on a recipe in a new mexico co-op booklet. i had to learn the hard way that chiles can look alike , but some are mild and some are nuclear! also, you MUST use gloves when handling so many. anyway, i have tweaked and added to the recipe over the years and these are really good-just check the heat level 1st. these are great with a salad or a side with meats. —msgruvn
