Paleo Pancakes

Delicious Paleo pancakes made with bananas, eggs, cinnamon, chia seeds, and almonds. —Kimber Brown

What You'll Need
Ingredients
  • 1 Banana
  • 2 Eggs
  • 1/2 teaspoon Chia Seeds
  • 1 teaspoon Cinnamon
  • 1/4 cup Almonds, chopped
  • 1 tablespoon Coconut Oil
  • 1 pinch Sea Salt
Directions
  1. In a medium sized bowl, mash the banana(s) to a smooth texture. Add the eggs and whisk thoroughly until the “batter” is fully combined. Roughly chopped the almonds and add the to batter; followed by the chia seeds, cinnamon and sea salt.
  2. Heat a pan over a medium flame and grease with the coconut oil. Ladle the batter into the pan and cook for approximately 60 seconds per side; or until they are golden brown. Serve the pancakes drizzled in the vanilla agave syrup and garnish with berries.

Hi!

I've tried this recipe and I'm shocked on how different it looked. Looking past my inexperience with pancakes, the cooked batter looked nothing like in these pictures and I'm sure I used the quantities listed.

In the pictures you can't notice the cinnamon and the roughly chopped almonds in the batter. Can anybody share their results (with pictures if possible)?

Another question, did anybody tried using just one egg, how was the result?
For me these tasted too much like egg and the banana and cinnamon flavor completely faded away.

Really amazed just how yummy these are! I was skeptical but intrigued when I came across your recipe and as I'm now enjoying these for breakfast I'll definitely be adding these to the normal menu.

I used a banana that wasn't overly ripe and low-med heat in a nonstick pan. They hold together just like pancakes and crust nicely with a mild banana and eggy flavor. Thanks!
