Serves some lettuce, maybe some fruit, perhaps some proteinand veggies too.
- 1/4 cup champagne vinegar (can use white wine vinegar too)
- 1 tablespoon mustard (I use a smoky onion variety, but dijon is great too)
- 1 cup olive oil
- salt and petter to taste
- 1 shallot minced
- 1 teaspoon honey
- Combine vinegar, mustard, shallot and honey. Whisk in olive oil and salt and peppter.
