Author Notes: I need to eat very healthy during the week days so I can eat whatever I want on the weekends. so I do not use oil or butter and I eat a ton of vegetables and beans. This is something I eat for a snack later in the day. —JennyU
- 1 bunch kale
- 1 cup chicken broth
- 2 cloves garlic
- 1 medium onion
- 15 ounces can cannellini beans
- salt and pepper
- mince garlic and chop onion and saute in chicken broth until softened. Reduce heat to low. Remove kale stems and add the leaves to the pan and add more chicken broth if necessary. heat until leaves wilt. Add beans and heat through. salt and pepper to taste.
