Here at Food52, we love recipes—but do we always use them? Of course not. Because once you realize you don't always need a recipe, you'll make your favorite dishes a lot more often.
This is not quite a Spanish tortilla, but it has all the desirable qualities of one—with a little less work. In this video, Executive Editor Kristen Miglore and Test Kitchen Manager Erin McDowell riff on the classic Spanish tortilla. Their rendition involves fewer worrisome flips of a cast-iron pan and a slight variation on cooking the ingredients, but yields the same texture and beautifully stacked layers of egg, onion, and potato you want from a Spanish tortilla.
