Here's what you found at your local farmers market last week using the hashtag #F52farmstand.
What's to be done with quail eggs smuggled back from the English countryside? Soft boil them and dust them with fresh ground coriander seed + @shop_ila Cyprus flake salt. And then put them on one of my favorite pregnancy salads (rich in folate + protein and more iron than beef), a mix of chickpea, quinoa, and avocado in a Meyer lemon miso dressing. I'm an omnivore, but in pregnancy I've turned to pulses (aka chickpeas, dried peas, lentils, and beans) as my main source of protein + fiber because they're also a great source of iron & folic acid and a slew of other nutrients too. And fun fact: the non-heme iron found in abundance in plants is more easily absorbed when eaten with vitamin c (hence the citrus vinaigrette!)
