Dinner Tonight

Your 10 Favorite Weeknight-Friendly Recipes (Grocery List & Cooking Plan Included)

Do you know what you're making for dinner tonight? Oh, us neither! Maybe you'd like a sandwich pretending to be spanakopita? Or a bowl of sparse-on-ingredients, big-on-flavor soup?

Oh, or how about one tonight and the other tomorrow night? Look, there you go—meal planning! Here are your 10 favorite weeknight-ready recipes from the past year:

You basically only need an onion, a head of cauliflower, and water.

Ready in about 20 minutes (just don't forget a baguette for serving).

Ha! But you didn't stew and stir all day. There's maybe 40 minutes of work, tops.

Here's a 5-ingredient chicken dinner. You're welcome.

Non-meat meatballs, meet a vibrant, creamy, and coconut-y sauce.

It's also a viable excuse for any night of the week and/or weekend.

This one-pan dinner is great on its own, but really great with a poached egg on top (which no longer makes it one-pan, but still).

Happily not tuna salad, but similarly quite content on a piece of toast.

We can guess why you like this based on the fact that it includes one pot and cheese in the title.

And the winner is...

Ah, we see you have a thing for melted cheese. Us too! It's also an excuse for you to justify grabbing that panini press stored away in your closet. A win-win all-around.

I fall in love with every sandwich I ever meet.

I make this recipe literally once per week. My 1 year old and 4 year old both love it and it reheats nicely for lunch. I've done variations by using a cast iron skillet or adding broccoli to it as well and letting it steam while the salmon cooks.
