I'm pretty sure I'm not inventive enough to come up with something that hasn't already been done, but oh, how excited I am to try everyone else's entries! The first morels of the season have just arrived at the market, and they make me weep for joy. Morels and asparagus, with strawberries for dessert, and the world is alive again!

the only wild mushroom avaiable in the next fortnight are the st george ,i will be forageing soon for these delicate little funghi soon then will submit my favourite recipe

I do love mushrooms but I'm a bit surprised on the timing of this theme. It's easy to find cultivated mushrooms this time of year but the wild varieties I associate with fall and winter. I just don't associate mushrooms with spring. Meanwhile really wonderful aspargus are coming into the markets. Oh well, maybe next week.

I'm with you on this one... I find my best mushrooms in the late late summer, fall & early winter - chanterelles, hedgehogs, bear's head, lobsters, boletes, etc...
