To celebrate Potato Week here at Food52, we’ve partnered with Potatoes USA to share ways we love to use the staple ingredient in meals that bring people together. These five weeknight menu ideas bring out the best in this versatile and nutrition-packed kitchen player.
Look, some dinners are one-and-done. They wilt, disintegrate, mush, or just don’t taste the same reheated. And that’s okay! Those dinners have their times and places. But when the week is packed with lunch meetings, early-morning workouts, drinks with coworkers, and out-of-town visitors, you need a meal that’s built to last–something that tastes just as good on its fourth go-round as when you whisked it out of the oven.
Enter the trusty potato, which is hearty enough to satiate your appetite and withstand a jaunt in the microwave. It can star in salads, soups, and cakes with a versatility that will have you excited for mealtime. Plus, they aren’t too picky about where you store them.

Potatoes should br stored in a cool area, away from heat, but not as cold as a fridge. They should be covered to prevent 'eyes'. Check them often, as one going bad will destroy the rest of them in a blink.
