Sorry to disagree, but what’s wrong with just having some open, calm space on the kitchen counters? My kitchen counters and cabinets are beautiful on their own and I love the kitchen best when they can be seen. Cluttering it up with trays, plants, lamps, etc. takes away from its functionality. There’s a reason that when a house is staged for sale that most of the decorative items are removed—it makes a room look busy, crowded, and small instead of calm, inviting, and roomy.

Above-the-stove is not an ideal storage space. Spices and oils will fade faster. Tools you may reach for while cooking present a burn risk when reaching across boiling pots, so choose wisely in this category.
I will store more than fruit on the counter as a display. Fresh-baked goods, candies and other homemade snacks will be at hand to offer to guests. If I have no other location to do so, my kitchen counters will also styled with a coffee/tea station and water glasses in full view so guests can easily help themselves and feel that spirit of welcome and generosity in my home.
Otherwise, I agree with, and use, all of your pointers. I also use my trays and baskets to contain my fresh produce and pantry ingredients for a planned work session in the kitchen. Just in case someone drops by, I can tidy up quickly and clear enough counterspace to play hostess for a short visit in my tiny kitchen.

You saved me the trouble of posting about spices and oils. My spices are stored in the freezer, EVOO is in the fridge (and no, it doesn't cause the oil to deteriorate). A most enthusiastic thumbs-up.
