Let's take a moment to thank our potatoes. We call them humble; we overlook them in pursuit of sexier, more exciting vegetables. But then they turn out to be the friend who remains faithful, through thick and thin, ready to jump back into our kitchens once we realize what we were missing.
We call them salad, and soup, and pizza; they hold up our braises and complement our roasts, crisping up with a brush of fat and softening with a kiss of cream.
This Saint Patrick's day, we'll be putting our industrious little tubers to work, raising a glass to the fact that there's no potato famine in sight. Cheers!
