Best way to pre-cook bacon & store for 2 days

I can't handle doing everything in one morning/day. I like to prep as much as I can.
When pre-cooked/cooked bacon reheated, I'd like it to look like I just cooked it.

You might try juuust barely undercooking your bacon in the oven -- spread the slices on a rack above a baking sheet and cook at 350 degrees until still slightly chewy. The fat will render out, and on the day of your event you can just spread the bacon on a sheet and bake them for a few minutes until they crisp up and get hot.
