well, there's usually 3 kinds of coleslaw here in the south: mayo, mustard, and vinegar. i use a combination of the three. for a store-bought bag of cole slaw mix i usually use: 1/4 cup mayonnaise (good quality), 2 Tbsp. milk, 1/4 tsp. onion powder, 1/4-1 tsp. sugar (optional), 2 Tbsp. vinegar (white, apple, red, or lemon juice), and 1 tsp. yellow or dijon mustard. season with salt and pepper. stir to combine. if it seems dry, remember that the salt and acid will begin to leach out the water from the cabbage and carrots in about 10 minutes, so go light on the dressing because you can always make and then add more.

Cole slaw is just shredded cabbage - any kind-or a combo of two or three-and a vinegar or mayo based dressing. You can also add shredded carrots.
