Yeasts are wild organisms in the air, but the only way I know to capture them is by mixing a "starter" from flour and water and allowing it to ferment your kitchen for a few days. Google traditional sourdough starter for exact instructions. I have heard of people drying thin layers of proofed sourdough starter and then scraping them up into yeast "flakes" but I have not done this myself. It's a lengthy process so you may be better off to purchase a good fresh yeast.
