For every one up of AP flour, minus one tablespoon of flour & replace with a tablespoon of cornstarch.

Pastry Flour. Cake Flour is a low-protein flour, which means it does not develop a lot of gluten, the stuff that makes bread chewy. All-purpose can do in a pinch, but will yield a denser crumb,
