I was going to suggest a toaster oven. But SKK's suggestion is great. Along the lines of a no-bake crust, you can make a custard filling or e a french style tart with a graham cracker crust, pastry cream and fresh fruit with an apricot jam glaze.
Here's a recipe (by Ina Garten) you can use for the pastry cream and the fruit:
Heat your filling on top of the stove and use a cookie pie crust or a cereal pie crust. There are also crusts you can microwave, recipes on line. I have not tried that. And if you have a toaster oven you could bake.
