Suckling Pig

My son got me a suckling pig for xmas. I need the freezer space now and would like a good recipe or process to prepare it. I have watched several shows on cooking a suckling pig and have even cooked a whole hog of about 170 lbs. This one is 23 lbs. and I want to do it right.

Although I've never actually tried it, there is a recipe in the Joy of Cooking for suckling pig. You might also want to check out this short documentary http://southernfoodways...
It's not a recipe, but it's pretty incredible.
