You can braise it or smoke it but what do you want it to be like in the end?

I've been meaning to try to take a brisquet all the way to a home made pastrami, but haven't gotten around to it.

Brisket taste best if cooked for a long time 2 1/2-3 hours. Not a great dish to try in the hot summer. I like to roast mine with a mix of savory and sweet ingredients -- canned whole tomatoes, onions, carrots and a mix of dried fruit like dates, prunes and apricots
