5 tablespoons of soy sauce, 3 tablespoons of rice vinegar, 2 tablespoons of honey, 1 minced glove of garlic, 1 inch of microplaned ginger, mixed together. Wash mahi filets, pat dry, and marinate in above ingredients for at least 30 minutes but not more than 60. Grill mahi, heat and reduce marinade. Drizzle heated marinade over mahi and rice. Serve & enjoy.
I like baking it with a little olive oil, salt, and pepper. Once out of the oven, cover it with a salsa made of chopped mango, avocado, red onion, lime juice, and cilantro.
