You could use 1 cup soy milk with 1 Tbsp lemon juice

Or white vinegar, or even cider vinegar works well, too, with regular milk. (I always use vinegar instead of lemon juice, because it's so much easier.) Ratio is the same. ;o)
Sour cream and yogurt also work, depending on the application.
