Recipe calls for buttermilk. I only have milk. Is there a substitute? Can I make buttermilk?

I have always used 2 TBLs of apple cider vinegar, and it has always worked! Makes delicious Buttermilk baking powder biscuits! I never ever use a microwave!

I've used the same tip as Barbara's, but use more lemon juice: add 2 tablespoons lemon juice to a 1-cup measuring cup then fill up the rest to the 1-cup mark with milk.

Are you baking with it? You can't make buttermilk, but you can add about a teaspoon of lemon juice or vinegar to milk to sour it and it will act like buttermilk in baked goods.

If you have vinegar and milk, you can make sour milk which subs perfectly for buttermilk. To each 8 ounces of milk, stir in 1/2 teaspoon of vinegar (any vinegar except balsamic, for what I trust are obvious reasons), and let sit for 5 minutes. I like to warm mine in the microwave for 15 seconds or so to move it along a bit faster.
