sns, just fyi, any 'quick bread' ( uses baking powder/bak soda as a leavener) can be made into muffins. just follow Mrs L's guidelines.
Btw, any empty muffintins>>fill halfway w/ water.
Anyhoo, I haven't ever made muffins out of this, but it sounds like it should work! I've made mini loaves with great success, so I don't see why muffins wouldn't work.
ZombieCupcake is right, reduce baking time. If you're using a traditional muffin pan, I'm not sure if there's enough batter for a dozen muffins. Fill the muffin cups about 1/2 to 2/3 full. I'd start checking them around 10 - 15 minutes in.
