They are French kidney beans that range in color from pale green to white. If you can't find them you could probably substitute another small white dried bean

Not really. They are basically immature white kidney beans. Color ranges from white to pale green. You can substitute navy beans if you can't find flageolets.

I have found beans labeled 'white kidney' in a Middle Eastern market.
