If you're working towards a "red, white & blue" theme, how about red velvet cake with cream cheese frosting (or an boiled milk frosting) topped with blueberries?
I'm gonna make shortcake with strawberries over half, blueberries over the other half and whipped cream. Remember, folks, flag protocol in the United States frowns upon making foods that look like the flag or using flag-printed napkins, plates, etc. that will be thrown in the trash. (Everybody has a pet peeve or two - Disrespect for our country's flag is one of mine!)
WileyP, interesting - I hadn't heard before about "food" things regarding the flag. My mother would have a nervous breakdown if she was told not to make a flag cake. BUT you just gave a lot of us a fabulous reason to have seconds and polish off any leftovers. :-)

If you're short on time, cut some scones in half, toast them. Spoon berries over them - strawberries, blackberries, raspberries. If you're using strawberries, just slice them ahead of time, toss with a little sugar and refrigerate. They will macerate and produce a nice juice.
The berry juices will soak into the biscuits. Put some whipped cream on top of the piles of berries.
