Hi and Happy Belated Thanksgiving:

I am going to a after Thanksgiving, Thanksgiving dinner tomorrow and I am bringing Baked Mashed Potatoes. Although I have a standard recipe I was wondering if anybody out there has a really good one they would like to share?

I don't know what baked mashed potatoes are, but I do know that the mashed potatoes with caramelized onions and goat cheese can be made ahead and kept hot in the oven. http://www.food52.com/recipes/3012_mashed_potatoes_with_caramelized_onions_and_goat_cheese

I made them for T-Day. They are delicious. Leave the lid off though while in the oven, or they will be too loose. Also, you don't have to serve garnished with the caramelized onions. :o)
