Good time of year to be asking this question. Here's one of my own recipes: http://www.food52.com/recipes/2401_lenticche_con_cotechino_forza_gualdo_tadino while this calls for umbrian lentils (best in Italy), lentils de Puy are good substitute. The combination of lentils and sliced sausage symbolizes coins, and so good luck for the New Year.
Here's a recipe for Lentil and Sausage Soup (was a winning recipe on food52): http://bit.ly/5OWjsS Also, here's one for Sea Scallops with Puy Lentils and Fennel Cream http://bit.ly/dZi2kE
