I have several pounds of leftover prime rib,cooked medium rare, and would like to make beef pot pies.

Will I ruin the already cooked roast by searing it for color and flavor before adding other ingredients?

I wouldn't cook it again before you mix it with the rest of the filling ingredients -- would hate for it to go tough and dry on you!
