Egg substitute. Will flax eggs work to replace animal eggs in any recipe please? Thanks

For binding: have you tried chia seeds + water? For potato pancakes: flax seed + water would do it I bet. If you do find something that good for potato pancakes, please report back!

Thanks for all the helpful answers I was thinking of using it as a binder for recipes like potato pancakes. I had read that flax eggs work for baking, but I couldn't find info on its use as a binder for stove top cooking. Thanks again for the help.

I'm not entirely sure that you can say, absolutely, that flax seed can be used as a substitute in *any* -- and therefore, every -- recipe. Eggs are used as a leavening ingredient in some baked goods. The substitution could therefore result in a flatter cake, cookie, etc. It won't create a problem for all baked goods, but it could for some. In other dishes, where the egg is used as a binder, the flax seed should work just fine. What recipe do you have in mind? ;o)

My husband has a serious egg allergy so I've run the gamut with substitutes. I find that flax works well in a lot of things but not that well in some cookie or brownie recipes. I use the Bob's Red Mill egg sub. for cakes, breads and muffins. It definitely doesn't work in puddings. I use kosher gelatin (also a pork allergy,) in other recipes. Yes. 1 tbs flax meal to 3 tbs of water, mix and let it sit for 5-10 mins.
