Making stew. I have time to brown the meat, but not simmer for hours. Is it bad to brown tonight then refrigerate until tomorrow?

that's perfectly fine to do, but if you store the meat in the bottom rear corner of your frig, it would keep really well the one day you need to have enough time to sear and simmer/braise.
