Over a bowl of ice in the fridge, with a damp paper towel over them. Don't forget to go through then tomorrow before cooking, throwing out any that are open but don't close when tapped.

I'd take them out of their original wrappings and place in a bowl over a bowl of ice water. Cover loosely. As Meghan said, be sure to discard any that are already open that don't close when you tap them.
