I have Miso PASTE and I believe David Lebovitz's Roasted Strawberry Miso Ice Cream calls for 2 Tbs Miso POWDER. Do I use the equivalent amount?

I make ice cream all the time, passing pints on to neighbors, and David Lebovitz's Roasted Strawberry Miso Ice Cream is in great demand at this time of year, what with the availability of gorgeous farmers market berries. This is the best strawberry ice cream I've ever tasted, no question.

The miso does give it a different look, but I don't remember it curdling. Be sure to come back to swoon..I mean report on what you think.

No, it's 2 TBS Shirk miso paste...aka white miso. Here's the recipe. It's divine.

After i wrote here, i reread the WBJ article to which DL refers. figured from that picture, it was the paste. so i went ahead as instructed and the custard is chilling in the fridge, now. can't wait to try it! only thing is for the first time in my ice cream making history, the custard curdled. perhaps, the miso? i rescued it per DL's directions in the Perfect Scoop. We shall see.
