JOHN MIRE’S FAMOUS HUSH PUPPIES

1 1/4 cups all purpose flour
1/2 cup yellow cornmeal
1/4 cup white cornmeal
2 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
1 small onion, diced
2 fresh jalapenos, seeded and diced
2 eggs, beaten
1/2 can 12oz. beer of your choice
Canola oil
1. Combine the flour, white and yellow cornmeal, sugar, baking powder, and salt in a mixing bowl.
2. Add the onions, jalapenos, and beaten eggs to the flour mixture. Add the beer until the mixture is the consistency of a slightly thick cornbread batter.
3. Heat the canola oil to 350 degrees in a fish fryer, cast iron skillet, or a heavy bottom pot. You are going to need about 4 inches of oil above the bottom of the fish basket or skillet. Using a small scoop or spoon, gently slide small balls of batter in the hot oil. If the hush puppies are nice and round, they should roll over in the fryer and fry both sides on their own. But, after 4-5 minutes, check to make sure they have rotated, if not, carefully roll the hush puppies and continue fry for 4-5 more minutes until both sides are golden brown. Drain on paper towels and season with salt while still warm.
