I left a bowl of sugar cookie dough and kiffle dough wrapped in single layer of plastic wrap for five or six days in the fridge. Is it still ok to use?

I think as long as it's not dried out it should be fine.
yes. may not rise the same depending on the leavening in your recipe, but i think most cookie doughs taste better when they have sat under refrigeration for a bit to fully hydrate.
