Heidi Swanson's site, 101 Cookbooks always has great ideas and she always posts a list of Thanksgiving dishes (she has posted this years suggestions today). Everything on her site is vegetarian and much of it can readily be adapted to be vegan. Her recipes are usually pretty easy to execute and always delicious. She has a well organised recipes archive on her site too which could definitely offer some other great options. Good luck!
I would go with a bean dish from a culture that makes it as part of its cooking.
That way, you will have real taste, real flavor worked out over centuries.
